At Ryesgade 25, everything starts with the kitchen. It sits right in the middle – open, loud, alive. Around it: the restaurant in the front, the bar in the back. All connected.
The restaurant serves German and Austrian cuisine. Traditional dishes,
reimagined with humour, precision – and just the right amount of madness.
Think serious cooking, without taking ourselves too seriously.
Behind the kitchen is the bar. It feels like a hotel lounge – just without the hotel.
A place to start the night, take a break, or stay until late.

THE TEAM BEHIND IT ALL
This project didn’t begin with a business plan – it began with a shared vision,
a little madness, and a lot of heart. Ryesgade 25 is the result of curiosity, conviction,
and a desire to create something bold, warm, and real.
Jonas is the driving force and connector. He brings energy, structure, and a sharp sense for people and timing. Together with Jan, they form the backbone of the project. Jan is one of Europe’s most respected voices in natural wine – a sommelier with legendary taste and a
network that sets the tone for everything behind the bar.
At the core stands Lenny – head chef and soul of the kitchen. With humor, discipline, and a deep love for food, he gives the Botschaft its voice. Every dish carries tradition, playfulness, and heart.
Around them: a growing team of chefs, Front-of-House, architects,
carpenters, and creatives. Each detail – from the custom woodwork
to the drinks menu – is shaped by this collective.
